Learn from the masters at Butcher & Larder, as they demonstrate their process of breaking a side of pork into different cuts for cooking or curing.

 

You always order the charcuterie board, don't you? In your opinion, everything is better with bacon and you wouldn't think twice about bringing a whole prosciutto to a pot luck. But how does it all get from pasture to slicer?
 

Join fellow alumni for this private event as the acclaimed Chicago butchers from Butcher & Larder will demonstrate how they break down a pig, why they do it, and how it differs from traditional butcher shops. They will explain multiple uses for each cut of meat, cooking methods and techniques for each piece, and cuts that can be substituted for more common cuts.  Along with the demo, you will get to sample a spread of B&L's award-winning famous charcuterie and a beer. You can also purchase additional beer and wine at the cafe.

Event Information

Cost: $65/per person; includes characuterie, a beer and a 10% discount for anything purchased in-store that night.
Event limited to 30 spaces and tickets are nonrefundable.
